Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients: In a medium-sized bowl, whisk together almond flour, protein powder, baking soda, salt, and sugar-free sweetener.
Combine Wet Ingredients: In another bowl, mix the melted coconut oil (or butter), egg, and vanilla extract until well combined.
Form the Dough: Slowly add the wet ingredients to the dry ingredients, mixing until a dough forms. If the dough seems too dry, add 1-2 tablespoons of unsweetened almond milk until the consistency is right.
Add Chocolate Chips: Gently fold in the sugar-free chocolate chips.
Shape the Cookies: Scoop out tablespoons of dough and roll them into balls. Place them on the prepared baking sheet, flattening slightly with your hand.
Bake: Bake for 10-12 minutes, or until the edges start to turn golden brown.
Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
